Prosciutto wrapped doves
Dove season started at the beginning of this month and this is one of our new favorite recipes and so easy to do. They have been a big party hit!
Prosciutto Wrapped Doves
8 dove breast
4 pieces of prosciutto cut in half
Bavarian Mustard
English Wensley Pale Cheese
Dates, cut the long way into 4ths
Sage
Salt and pepper
Per heat the oven to 400 degrees. Pound the dove breast, sprinkle on some sage, salt and pepper and then cut long ways into 2. Take one of the half pieces of prosciutto and smear on some of the mustard. Place one of the cut dove breast, one of the date pieces and some cheese. then roll and place on a sheet pan with parchment paper. Make sure the seam is on the bottom. repeat until all the dove and prosciutto is used. Place into the oven until the prosciutto is crispy about 8 min. Don’t overcook or the dove will get tough.
