Cucumber Salad

I love these chopped salads they are so much more filling than just lettuce. This is a great side to lighten up any meal or I love if for lunch with a hard boiled egg or some shredded pheasant. Now I wish my garden was ready, but the seeds are growing!!

Cucumber Salad

• 1 cucumber, peeled and diced

• 1/2 cup of tomatoes, diced

• 1/2 cup of quick picked celery

• 2 tablespoons of pickling liquid

• salt and pepper

Mix all ingredients together and serve.
