Grilling Meat on a Stick

Nothing says summer like grilling. I love to cook all kinds of meat on a stick. They are great for parties because you can east them right off the stick. While I have many versions the below is my Pheasant Curry.
Meat on a Stick
Chop one onion and one bulb of garlic and cook in 2 tablespoons of olive oil until onions are tender. In a separate bowl, mix 10 tablespoons of curry with a little salt and pepper and one can of coconut milk. Slowly pour the mixture into the sauce pan with the garlic and onion, stirring constantly. Bring to a boil, then simmer until thickened. Let cool and then run through a food processor until smooth.
Pound the Pheasant thin and then cut into 1 inch strips then marinate for at least a day. Then put onto skewers and then grill!
