Left Over Fish??
Do you ever have leftover fish and are not sure how to reinvent it? Well these fish cakes are a great way to do it! Fried, Blackened it does not matter it will all work, just watch the species depending on what the original cooked fish has on it. Of course make sure there are no bones!!
Fish Cakes
3 cups of leftover fish
1 egg
1 teaspoon of old bay (adjust depending on the breading and spice of the original fish)
1/2 cup of breadcrumbs (if the left over fish is bread this could be less so add a little at a time until you are sure so it binds)
Mix all of the the ingredients together and then make into patties. Heat 4 TBS of olive oil over med-high heat and then pan fry until done.
