Seared Tuna with Asparagus and Beet Salad

I was lucky enough to land some sushi grade tuna and just had to cook some fish to break up all the meat we have been eating through this winter. If you can get you hands on some good tuna this is a very easy recipe. The complement of the asparagus and beets make a very healthy dinner. The below is a serving for two but is very easy to scale up.

Asparagus: helps to stregthen your immune system,is good for boosting your energy and gut health. Green asparagus contains more Vitaim B than other varieties.

Beets: have liver cleansing properties and strengthens your heart. While they are best eaten fresh or lightly steamed to get the most nurtitional values out of them the below recipe is a great way to show people that they can like beets. and beet chips are just so delicous!

Tuna: is good for your heart healh it is a semi-oily fish and an excellent source of protein and omega-3 essential fatty acids.


Seared Tuna with Asparagus and Beet Salad

  • 3 cups of canola oil

  • 2 sushi grade tuna steaks

  • Rice Seasoning

  • 1 bunch of asparagus

  • 1 tablespoon of olive oil

  • zest from 1/2 a fresh lemon

  • 2-3 medium sized beets, slice thin with a madeline

  • 2 tablespoons of olive oil

  • 1/2 teaspoon of sesame seed oil

Preheat the oven to 350 degrees. Also heat the canola oil in a deep stock pot to 375 degrees for frying the beet chips.

Coat the tuna with the rice seasoning and set aside.

Remove the woody stems from the asparagus and then place in a casserole dish and coat with olive oil, lemon zest, salt and pepper then cook in the oven for 10-15 minutes.

While the asparagus is cooking start cooking the beets in batches. As done take them out and place on a paper towel to drain. When they come out salt and pepper them. Once the beets and asparagus are done leave them in the oven to keep warm but make sure the oven is off, propping the door if needed so things don’t over cook.

Heat the olive oil and sesame oil in a heavy skillet over medium high heat. Once the pan is good a hot sear the tuna on all sides, this will go very quick. Remove the tuna from the pan and let rest while you assemble the salads then slice the tuna and plate, serve immediately.
