Curry Trout
1 Trout, cleaned Salt and Pepper
Make Paste with:
1/3 C Cashews
1 tsp Turmeric
1 tsp Ginger
1 Onion, chopped
1 Serrano Pepper, chopped
3 Cloves Garlic
2 Tomatoes, chopped
2 TBS Olive Oil
Preheat the oven to 350 degrees.
To make the paste, place the cashews, turmeric, ginger, onion, serrano pepper, tomatoes into a food processor and run until a paste develops. Oil a deep based dish that your fish will fit in. Then rub the paste inside and out of the fish and place inside the baking dish. Place in the oven and cook until fish is done. Approximately 25 minutes depending on size of fish.
Serve with Coconut Curry Vegetables.
