Wild Game Meatloaf

This is my husbands favorite meal by far! It is an easy reliable recipe and works with any large game meat.


Wild Game Meatloaf

  • 1 lb of ground meat

  • 1/3 cup of breadcrumbs

  • 6 oz can of tomato paste, divided

  • 1 1/2 teaspoon of garlic powder

  • 1 1/2 teaspoon of onion powder

  • 1 teaspoon of salt

  • 1 teaspoon of pepper

  • 1 teaspoon of ancho chill powder

  • 1 egg

  • 1/2 cup of stock

  • fresh chopped parsley for topping

Preheat the oven to 350°. In a large bowl mix together the meat, breadcrumbs, 2 tablespoons of tomato paste, garlic powder, onion powder, salt, pepper, ancho chill powder and egg together. lightly grease a loaf pan with some olive oil. Add the meat mixture to the loaf pan, leave a little room on all the sides so you can pour the glaze over the top and it can run down the sides.

Mix together the remaining tomato paste with the stock until smooth and salt and pepper to taste. pour over the top of the meatloaf making sure it goes down the sides. Cover with foil and place in the over for 45 minutes or until done. Remove from the oven and top with parsley.
