Coconut Curry Vegetables
2 Carrots, diced
1/2 Onion, diced
1 Cup Tomatoes, diced
1 Cup Green Beans
1 Cup Potatoes, diced
1 TBS Cumin
1 TBS Turmeric
1 12oz Can Coconut Milk
1/2 tsp Ancho Chili Powder
1 tsp Garlic Powder
1 tsp Mustard Seed
Salt and Pepper
2 TBS Ghee
Preheat the oven to 350 degrees. Add ghee to baking dish and place in oven to melt. While the ghee is melting, mix the cumin, turmeric, coconut milk, chili powder, garlic powder and mustard seed. Remove baking dish from oven, add carrots, onion and potatoes. Toss in ghee then salt and pepper to taste. Cover and place in oven for 25-30 minutes until potatoes are almost done.
Remove from oven, pour in curry mixture. Add remaining ingredients, tomatoes and green beans. Stir and place back in oven for another 15-20 minutes.
