Banana Foster Cups

This was a hit at my Mardi Gras party this year! A fun sweet treat that is bit size.


Banana Foster Cups

 Churro Dough

  • 1 1/2 cups of water

  • 2 1/2 TBS canola oil

  • 2 TBS sugar

  • 2 cups of flour

  • 3 eggs, beaten

 Filling

  • 4 bananas, diced

  • 2 TBS of butter

  • 1/2 cup of brown sugar

  • 1/2 cup of rum

 Other

  • Oil for frying

  • Cinnamon Sugar

Heat the water, oil and sugar until sugar is dissolved and low boil.  Remove from the heat and add about half the flour a little at a time but stirring fast.  Add the eggs and once they are incorporated add remaining flour.

Spray a mini muffin pan upside down with cooking spray.  Add churro mixture into a piping bag of gallon bag a cut the tip off.  You don't want it too large as you are going to individually pipe around the outside of the muffin tin to make small cups.  Pipe around each cup until the dough is used and then place in the freezer flat for at least 1 hour to set.

Start the filling.  Heat a pan over medium heat and add the bananas, butter and brown surgar with a little salt.  Cook the bananas down until almost cooked, depending on how ripe the bananas are this could be 3-10 minutes.   Set aside.

Heat your oil in a deep pot or your fryer to 360 degrees.  Remove your churro dough off the muffin pan and begin frying in batches.  As soon as they come out of the fryer GENEROUSLY coat with cinnamon and surgar.

Once your bowls are complete arrange on a serving tray.

Bring the bananas back to the stove and turn the heat to medium.  Add the rum and then very carefully with a lighter light it in the pan.  Cook down until the bananas are done and the rum has burnt out.  Place the filling in the cup and serve warm.
